2 9" Pastry pie crusts

5-6 Cups kiwi fruit, peeled and sliced. (12-14 depending on the size of the fruit)

1 Cup sugar

1/4 Cup baking tapioca or cornstarch

Juice of 1/2 a lemon

1/4 Teaspoon of ground nutmeg or of ground cinnamon. We used nutmeg.

2 Tablespoons butter or margarine

Kiwi fruit is another of those fillings that doesn't give up the fight easily. They are hairy, for one thing, which makes it more difficult to peel them with a regular peeler. It can be done, but my suggestion – and what I did – is that you use a good sharp knife, give up a tiny bit of fruit by cutting away the peel, and save yourself about an hour of hard work. This is also another pie where, once we'd done it with the round slices that look so good in the photograph, we determined that we would probably have been slightly better off if we'd diced into chunks. Either way, the pie is tasty, and kiwi is not crisp – it slices easily, so this is another point where it's up to the individual baker. We used about six cups of peeled, sliced kiwi in our pie. When your kiwi fruit is sliced, sprinkle on the lemon juice and set it aside.
