1.Preheat the oven to 180 °C.
2.For the herb crust, crush the pistachio nuts in a blender until they are the size of peppercorns or slightly smaller. Add the white bread, herbs, salt and pepper and blend again.
3.Cut the salmon into bite-size pieces and coat all over with the honey.
4.Tip the herb crust into a bowl and use to coat the honeyed salmon.
5.Place the salmon pieces onto a greased baking tray and bake for 4–6 minutes or until done to your liking. I prefer it quite pink. When cooked, remove from the oven and set aside.
6.Scatter the mixed leaves onto a platter and add the mangetout and red pepper.
7.Whisk together the dressing ingredients and pour over the salad.
8.Place the salmon pieces on top and sprinkle over any leftover herb crust.
