Ingredient List:

6 cups vegetable stock

32 oz. can diced tomatoes with liquid

1 chopped onion

3 chopped carrots

1 peeled and sliced zucchini

2 peeled and cubed potatoes

Salt and ground black pepper to taste

½ teaspoons Italian seasoning or to taste

15 oz. can kidney beans

1 cup peas

1/4 cup elbow macaroni

2 cups baby spinach

¼ cup grated parmesan cheese

Methods:

Add all ingredients except the beans, macaroni, peas, and spinach to a soup pan.

Stir well and cover the pan.

Cook on low for 30 minutes.

Add the beans and macaroni and cook for 10 more minutes, until the pasta is done.

Stir in the spinach and cook for another minute.

Serve with grated parmesan cheese.
