French Coconut Pie

Ingredients

2 1/4 cups white sugar

2 tablespoons all-purpose flour

6 eggs

1 cup buttermilk

1/2 cup margarine, melted

1 cup flaked coconut

1 cup chopped pecans

2 prepared 8 inch pastry shells

Direction

Preheat an oven to 175 degrees C (350 degrees F). Combine together the flour and sugar in a small bowl.

Use a wire whisk to mix the eggs in a large bowl. Whisk the flour mixture into the eggs until smooth. Mix in pecans, coconut, margarine and buttermilk. Transfer into the unbaked pie crusts.

Bake for 45 minutes in oven. Bake for 1 hour if you are making a 9 inch deep dish pie.
