Prepare the rough puff pastry and chill in the fridge. Remove from the fridge 10 minutes before using to let it warm up a little so you can roll it easily. Set aside. Make up the stuffing mix in a large bowl as per the packet instructions but using a quarter (25%) less water and butter (you can omit the butter entirely if you wish). Leave to cool.

Add the sausage meat and dried cranberries to the cooled stuffing and mix together well.
