SERVES 4
2 litres (3½ pints) chicken or veal stock
a good pinch of saffron strands, soaked in a shot glass of hot stock
60g (2¼oz) unsalted butter
1 small onion, very finely chopped
30g (1oz) veal or beef bone marrow
400g (14oz) Vialone Nano risotto rice
125ml (4fl oz) dry white wine
20g (¾oz) grated fresh parmesan, plus extra for sprinkling
sea salt, to taste
