There are a lot of different kinds of veggie burgers out there. They can generally be put into three main categories.
Beany/Grainy: This kind of veggie burger—grains or veggies held together by beans—can be super delicious but often ends up being mushy and smooshing out the sides of the bun. I do not hate this kind of veggie burger, but I also do not need for it to exist in my life. I mean, we already have falafel! And falafel is its own real thing, and it’s too proud to pretend to be a fake version of something else. Falafel. So strong.
Fake Meaty: This veggie burger seems like it’s trying to attract vegetarians who are vegetarian for ethical or health reasons but who would prefer to keep eating meat. It tends to be dense and chewy and made of soy products or seitan. I got really into these in high school. With all of the usual condiments (ketchup, mayo, pickles, lettuce, tomato, etc.), they taste a lot like McDonald’s hamburgers, which are both excellent and the end of the world.
Super Vegetabley: These are made from a bunch of loosely bound chopped vegetables (peas, corn, etc.). This kind of veggie burger tends to be fairly crumbly, tastes nothing like a hamburger, and is totally unapologetic about that. Of the three, this one tends to be my favorite. This veggie burger is to the burger lexicon what Michel Gondry is to film.
The veggie burger produced by this recipe is a hybrid of the last two categories. We will grind seitan (a move I learned from my good friend Elena Balletta) and mix it with roasted and shredded broccoli for a lighter, more vegetal flavor. It’s a little crumbly, but it’s similar to the way ground meat crumbles, and it doesn’t taste like a burger, but it does taste like something totally awesome, and that is fun. And my buddy Jeff and I figured out how to make it vegan!! And this is the easiest veggie burger recipe of all time! You can throw this together and get your kids to eat their veggies in no time.
