16. Crustless quiche
For those times when you don’t feel like a substantial crust in your quiche, try this crustless recipe that tastes amazing and won’t be too filling. I like having this for a light lunch or dinner.
Preparation time -20 minutes
Servings -6
Ingredients • ½ ounce vegetable oil
• 1 chopped onion
• 10 ounces thawed frozen spinach, drained, squeezed dry and chopped
• 5 beaten eggs
• 24 ounces Muenster cheese, shredded
• 1/4 teaspoon salt
• 1/8 teaspoon black pepper, ground
Directions
1. Preheat oven to 350 degrees Fahrenheit
2. Coat a 9” pie pan with a cooking spray
3. Heat oil in a big frying pan on the medium high. Sautee onions in the oil for 5 minutes or until translucent
4. Add spinach to the onions and cook for another 5 minutes or until no longer moist
5. Beat eggs, cheese, salt and pepper in a bowl. Transfer spinach and onions to the egg mixture. Pour filling into the pie pan
6. Bake for 30 minutes or until set
