CHICKEN AND PHO FAT RICE

I often have leftover chicken from a pot of pho, particularly the pressure cooker recipe on this page. Taking a page from chicken pho restaurants, I use the meat and some of the broth and fat to make a flavorful chicken and rice. Lots of garlic and ginger get fried in the fat, resulting in a dish similar to Hainanese chicken and rice. However, I serve mine with a Viet ginger-lime dipping sauce as well as with soy sauce and chile. If two sauces are too much, just offer the gingery one.

If there’s extra chicken pho broth around, serve it on the side. Add a light salad for a balanced meal. This is a rice lover’s dream dish.
