Instructions

1. Take two tbsp of oil in a soup pot. Now, add galangal or ginger, onion, garlic, lemongrass, and fresh chili [or chili sauce].

2. Stir and cook until they are fragrant. Add the broth and rice and leave them to boil.

3. Add the carrots and the various spices. Now, cover and let them cook for 15 mins on medium flame. Check occasionally until soft.

4. Combine with coconut milk and stir well. Take the contents of the soup and puree them in batches in a blender. Now, pour it back in the soup pot.

5. Warm the soup again over medium heat and add soy sauce, fish sauce, and lime juice. Taste and check if salt is needed.

6. Part it into bowls and garnish with fresh coriander and basil leaves while serving.
