Oyster Stuffing

Ingredients:
• 1 yellow onion (peeled and chopped)
• 1 rib celery (chopped)
• ¼ cup butter (chilled and cubed)
• ¼ tsp poultry seasoning
• 2 tbsp fresh parsley (minced)
• ⅛ tsp fresh rubbed sage
• ⅛ tsp black pepper
• 3 cups day-old bread (cubed)
• ⅔ cup chicken stock
• 1 egg (beaten)
• 1 cup of shucked oysters (drained, roughly chopped)
Directions:
1. Preheat the main oven to 350 degrees F and grease a 1-quart baking dish.
2. Sauté the onion and celery in butter using a small skillet until the vegetables are softened.
3. Stir in the poultry seasoning, fresh parsley, fresh rubbed sage, and black pepper.
4. Next, add the cubed bread.
5. In a small bowl, beat together the stock, egg, and oysters. Gently stir the egg mixture into the bread cubes until combined.
6. Transfer the mixture to the baking dish, cover, and bake in the oven for 20 minutes. After this time, uncover the dish and bake another 10-15 minutes until lightly browned. The mixture should register an internal temperature of 160 degrees F.
