24. Egg Sauce
Egg sauce is a special delicacy which can be taken with yam, fried or boiled plantain, bread or even rice.
Ingredients
2 Eggs
1 large ripe tomato
2 Scotch Bonnet pepper
1 small onion
100ml vegetable oil
1 seasoning cube and a pinch of salt where necessary
Method of Preparation
Slice your tomatoes, onions and peppers using a sharp knife and chopping board.
Set your non stick frying pan on the cooker and add 100ml of oil (vegetable or olive oil).
Allow one minute before adding the sliced tomato, onion and peppers.
Stir and allow all to fry for 5-8 minutes.
Once it is slightly fried, add 1 seasoning cube and stir occasionally to prevent burning.
Break the eggs into a bowl, beat well and set aside.
Add a pinch of salt to it and then pour on top of the frying tomato, onion, and pepper combination.
Allow a minute to let egg set, after which you stir to mix all ingredients together and break the mixture into smaller sizes.
