This soup is perfect to fall back on during the week, as most of the ingredients will probably already be in the pantry. The essential thing to remember with spices is that you need to sauté them in a little oil before adding your other ingredients, as this releases all the aromas and flavors, and softens them so you don’t get a harsh hit.
SERVES 4
generous 1 cup red lentils, rinsed
1/2 chicken stock cube
1 tsp ground turmeric
1 tsp garam masala
1/2 tsp mild chili powder
1 tbsp unsalted butter
3/4 cup canned coconut milk
1 small onion, thinly sliced
1 tsp cumin seeds
1 tsp mustard seeds
1 tsp black onion seeds
juice of 1 lemon
flaky sea salt
plain yoghurt, to serve
