LINC’S MEDITERRANEAN STEW

SERVES FOUR

3 tablespoons olive oil

5 garlic cloves, minced

4 chicken thighs, skinned

1 pound lean lamb, cubed

1 cup white wine

4 cups chicken stock or broth

20 dried apricots

1 (7-ounce) jar kalamata olives, pitted

10 prunes (Honest: You need these to make it good.)

1 tablespoon fresh thyme, chopped

1 tablespoon fresh rosemary, chopped

Salt and pepper

2–3 tablespoons Dijon mustard

Tamarind paste, optional

In a large pan or Dutch oven, heat oil then sauté garlic and brown chicken on one side. Turn and add lamb. Once brown, remove meat to plate and drain oil. Then add wine, stirring, to dissolve particles on bottom of pan. Add chicken broth and all other ingredients except mustard. Stir, cover and simmer for 90 minutes, stirring occasionally. Over time, the prunes will disintegrate and help form a nice, semithick sauce.

Before serving, stir in the Dijon, adding more if you want a more tangy dish. If you have tamarind paste, replace one tablespoon of the mustard with the paste. Add fresh-ground black pepper to taste.
