Two more loads had everything stored in the shack. Cam checked the temperature and placed a quart jar underneath the drain where the liquid would arrive once it finished the process. “Shouldn't be much longer until we start getting the head from this batch,” Cam announced.

“Do I need to go start a fire?” Sandy asked. They usually poured the head, the first few ounces on the fire, to test the shine. Removing this portion from the batch helped judge the proof. After they pulled off the head, it would be safe to try a taste of the shine.

“Naw, I think we'll be good. That Swamp Juice always starts strong,” Cam replied. “What else did you mash in?”

“A dozen watermelons,” Wanda said. “They weren't near as big or heavy as these, though. You may get two or three batches from these monsters.” She placed a large melon on a tray to capture any escaping juice and sliced it open. The deep red meat of the melon glistened with juice under the light of the shack. “Man, these are pretty.” She handed Liz a scoop. “Get to scooping. I'll drag a barrel over.”

“Do we worry about the seeds?” Liz asked.

“Naw, they will separate, and we can strain them out before we cook,” Sandy informed her. “Some folks don't even worry about them at all.”

A few minutes later, Sandy turned at the sound of trickling liquid. “Here comes the head.”

Cam nodded. “Give it a few and then dump it out and put one of the buckets underneath the flow. We can test it and see if we need to proof it down some.” Cam continued coring apples before slicing them into smaller sections. Sandy was working on the pears.

“We are running low on five-gallon buckets, and we're going to need more gallon jars before the next run,” Sandy said.

“Buster and Jeff got you covered. They'll be home tomorrow night and will have their truck bed loaded down,” Wanda said.

“That's great news,” Cam said. “We should be able to cook this batch tonight and maybe a couple of the Bliss tomorrow night while we wait on the new mash for distilling. We can make a delivery run Friday or Saturday to fill our biggest orders.”

It was after eleven before they had all the fruit and melons cut for the mash. When Sandy noticed the time, she looked at Liz. “Don't you have to work in the morning?”

“Yes, I do. I know we should probably be going home. It's been good to spend time with you tonight. I think I missed y'all,” Liz said as she stood and stretched.

“We missed home too. It felt so good to pull into the driveway today,” Sandy replied. “A short trip is fine, but it's good to be home.”

The second five-gallon bucket was nearly complete. Cam rose to change it out.

“Sit tight, big sis, I've got this,” Sandy told Cam.

Wanda stood beside Liz. “Y'all don't stay up too late tonight. You've had a busy week, so try to get some rest.
