Chicken Kofta
Serves 4
Ingredients:
1 lb ground chicken meat
1 onion, grated
1 egg, lightly whisked
1/3 cup breadcrumbs
3 tbsp chopped parsley leaves
1 tbs freshly ground ginger
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
2 tbsp olive oil
1 cup chicken broth
1 tsp brown sugar
1 tbsp lemon juice
Directions:
Preheat the oven to 350 F. Line a baking tray with baking paper.
Place the ground chicken, onion, egg, breadcrumbs, chopped parsley, cinnamon, nutmeg and half the ginger in a bowl with a teaspoon of salt. Mix with your hands until well combined. Using damp hands, roll mixture into walnut-sized balls, then place them on a tray in a single layer and bake for 15 minutes until light golden.
Heat oil in a deep frying pan over medium heat. Add remaining ginger and stir for 1 minute until fragrant. Add tomatoes and cook for 2 minutes. Add broth and sugar. Bring to a boil, then reduce heat to medium low and simmer for 5 minutes. Add kofta and simmer for 20 minutes until kofta are cooked through and sauce has thickened. Serve kofta with rice, orzo or couscous garnished with extra parsley.
