Tropical Cobb Salad (Salata Tropical)

Ingredients

Dressing:

¼ cup orange juice

3 tablespoons lime juice

½ teaspoon liquid aminos

⅓ cup chopped cashews

½ cup parsley leaves

½ teaspoon ground black pepper

Salad:

1 (14½-ounce) can hearts of palm, rinsed and cut into rounds

8 cups loosely packed mixed greens

1 red bell pepper, diced

1 green bell pepper, diced

½ red onion, thinly sliced in half-rings

1 avocado, diced

1 cup corn kernels, fresh or frozen and thawed

1 cup unsalted and cooked black beans, drained

2 tablespoons cashews

Directions

Combine all the salad ingredients using a blender; blend to make a smooth mixture.

Season to taste and set aside.

Arrange the onion slices in a bowl. Add a few ice cubes on top and set aside for 15 minutes.

Drain the water.

Add the greens to a serving plate and arrange the remaining salad ingredients in between them.

Serve with the prepared dressing.
