½ cup softened butter
1 teaspoon fresh cilantro, minced
1-½ teaspoons lime zest
kosher salt ½ teaspoon
1/2 teaspoon chipotle pepper, ground
Optional coarsely ground kosher salt to taste
Instructions:
1. Soak corn with cool water in a big soup pot. Soak these corns for 30 minutes before draining.
2. Cover and grill corn for 25-30 minutes over medium heat, flipping regularly.
3. In the meantime, mix together the remaining ingredients.
4. Remove the husks with care and discard the silk.
5. Apply the butter mixture to the corn, add salt if you like, and voila!
