1. Preheat the oven to 450°F. Line a half-sheet pan with parchment paper.

2. Put the gnocchi, tomatoes, onion, and bell peppers in the prepared pan and toss with the olive oil and salt. Spread in an even layer.

3. Bake the gnocchi for 14 to 16 minutes, or until the peppers and onion are soft and the gnocchi is a little crispy.

4. Serve the gnocchi and veggies with the pesto for dipping, drizzled over the top, or tossed all together. Top with Parmesan, if desired.

Notes

• If you can’t find fresh refrigerated gnocchi, use shelf-stable gnocchi from the pasta aisle. Cook it according to the package directions, drain, and then toss with the roasted veggies.

• Use marinara sauce or Alfredo sauce for dipping. Warm for the best flavor.

• Serve with a side salad or Pan-Seared Chicken Tenders (this page), if desired.

• Skip the onion and tomatoes to make this a little easier to prepare.
