CHAPTER 6 CHICKEN RECIPES

Grilled Chicken Legs

(Prep time: 5 Mins|Cook Time: 15 Mins| Servings: 11)

INGREDIENTS

7 to 8 chicken leg and thigh quarters (About 5 pounds) 1 Cup of extra virgin olive oil

1 Cup of your favourite Chicken Rub or your favourite Barbecue rub 2 Cups of Worcestershire barbecue sauce

INSTRUCTIONS

1. Start by washing the chicken under cool running water and pat it dry with paper towels

2. Rub each chicken portion with oil; then season it with the chicken rub 3. You can either set the chicken aside to marinate for about 2 hours or you can start your pellet grill immediately

4. Start the grill on the setting smoke and leave the lid open and wait until the fire is established; then set the grill on Smoke with the lid closed and preheat it for about 10 to 15 minutes

5. Arrange the chicken legs or quarters on top of the grill grate with the skin-side up and roast for about 1 and ½ hours 6. Roast for 1 to 1-1/2 hours; then with the help of a basting brush, gently apply the barbecue sauce on both sides of the chicken during the last 15

minutes of cooking; never apply sauce too early 7. Remove the chicken from the Pellet grill and let it rest for about 5

minutes

8. Serve and enjoy your chicken legs!
