Cauliflower Curry with Cashews
Makes 3 servings
Calories per serving: 203
Ingredients:
● 1 small onion, chopped
● 2 1/2 cups chopped cauliflower
● 2 1/2 Tbsp raw cashews
● 1/4 cup water
● 1 1/2 cups pure coconut milk
● 1 tsp olive oil
● 1 Tbsp curry powder
● 1/2 tsp turmeric
● 2 1/2 Tbsp chopped fresh cilantro
● Cinnamon
● Sea salt
Instructions:
In a food processor or using a mortar and pestle, ground the cashews until fine. Set aside.
Place a small soup pot over low flame and add the olive oil. Stir in the onions and sauté until tender. Add the cauliflower and sauté until crisp.
Pour the coconut milk, ground cashews, turmeric, and curry powder. Stir until combined, then add the water and continue to simmer for about 8 minutes over low flame.
Season to taste with cinnamon and salt, then turn off the heat and let cool.
Once cool, transfer the solids into a large blender or food processor using a slotted spoon. Process until smooth, then pour back into the pot and stir into the soup. Simmer until heated through over low flame, then serve.
