LAMB KEBABS WITH SPICED YOGHURT

Lamb meat is made for barbecuing. But keep in mind the lamb leg, like rump in beef, is made up of several different muscles so it will vary in texture and tenderness.

Serves 3

1 small boned leg of lamb, about

1.25 kg (2 lb 12 oz)

3 tablespoons plain yoghurt

1 teaspoon ground cumin

1 teaspoon ground turmeric

½ teaspoon garam masala

2 teaspoons sea salt

1 white onion, chopped

2 garlic cloves, chopped

1 tablespoon finely grated ginger

1 large handful chopped coriander (cilantro) leaves

olive oil, for brushing

lemon wedges, to serve
