Add mustard and celery seeds, honey, turmeric, and optional leaf with tannins to the bottom of a clean WECK jar and pack the cucumbers and onions in, leaving 1 inch of headspace. Pour the saltwater over the cucumbers until they are completely submerged, leaving at least ½ inch of headspace. Add a WECK jar lid from a smaller jar to act as a weight to hold down the produce under the brine. Add the glass WECK lid with rubber ring to the rim of the jar, and clip the jar shut with the metal clamps, one directly across from the other. Within 24 hours, the honey at the bottom of the jar will effortlessly dissolve and mix with the rest of the brine. Tip the jar upside down once or twice per day to mix up the ingredients and brine. Store at room temperature, ideally between 60 to 75°F (15 to 23°C), and keep out of direct sunlight.
