Put the oats in a blender or food processor and blend until it is a fine powder (this shouldn’t take more than 20 or 30 seconds). You will have about ¾ cup oat flour.

Beat the milk and egg together with a fork in a medium bowl. Stir in the melted oils—I like a mix of ghee and coconut oil, which lends both buttery and coconut-y flavor to the pancakes. Add the oat flour, salt, baking soda, and baking powder and stir just until combined. Let the batter sit for 10 minutes to thicken.

Heat a skillet over medium-high heat. Grease lightly with oil or butter and spoon on the batter, about ¼ cup per pancake. Cook the pancakes until a few bubbles on top have broken, then flip them over and cook until golden on both sides.
