Sweet potato chips

PREPARE: 5 MINUTES COOK: 40 MINUTES SERVES: 2–4

Sweet potato chips are the perfect side dish to many meals, including the Fennel and Roast Tomato Lasagne on page 80.

100 ml/⅓ cup olive oil, plus extra to drizzle

1 teaspoon miso paste or ½ teaspoon Marmite yeast extract

750 g/1¾ lbs. sweet potatoes, peeled and cut into wedges

table salt and freshly ground black pepper, to season

Preheat the oven to 180°C (350°F) Gas 4.

Pour the olive oil into a large mixing bowl and add the miso paste or Marmite yeast extract. Toss the sweet potato wedges in the mixture until they are coated with oil and miso.

Spread the wedges out onto a baking sheet. Put in the preheated oven and cook for 40 minutes.

Remove from the oven, sprinkle with table salt and black pepper, and serve.
