Safety in Production Processes

The processing of seafood is very strictly regulated in the United States by the USDA and the FDA through a system called Hazard Analysis and Critical Control Points (HACCP). This system was introduced as a preventive approach to food safety as the seafood is processed, rather than trying to detect problems by testing the finished product. Regulations associated with HACCP require frequent monitoring and testing.
