Smoked Sausage Lasagna

SUGGESTED PELLETS: HICKORY, MESQUITE

SERVES 8 PEOPLE

PREP TIME: 15 minutes

COOK TIME: 45 minutes to 1 hour

TEMPERATURE: 375°F

1 pound ground Italian sausage

2 (18-ounce) jars marinara sauce, divided

1 package oven-ready lasagna noodles, divided

1 (15-ounce) container ricotta cheese, divided

4 cups shredded mozzarella cheese, divided

Lasagna is one dish you might never have thought of to cook on a grill, but cooking your lasagna on the Traeger makes it extra delicious! This is a great recipe when feeding a crowd, and everyone will love the twist that the wood-fired flavor gives the lasagna. It’s so good that this is the only way I will cook a lasagna.

1. In a large skillet, cook the Italian sausage over medium heat for 5 to 7 minutes, breaking it apart as it cooks.

2. Turn the Traeger on and set the temperature to 375°F.

3. Pour 1 cup of marinara sauce into a 9-by-13-inch casserole dish (I suggest a disposable foil pan for easy cleanup). Spread the sauce evenly and lay 4 lasagna noodles over the sauce.

4. Spread one-third of the ricotta over the noodles, then one-third of the cooked Italian sausage over the ricotta. Layer 1 cup of mozzarella cheese, followed by 1 cup of marinara sauce. Lay 4 lasagna noodles over the marinara, followed by one-third of the ricotta, then one-third of the Italian sausage, then 1 cup of mozzarella. Repeat in this order with the remaining noodles, ricotta, Italian sausage, and mozzarella.

5. Place the lasagna on the grill grates for 30 to 40 minutes. Top with the remaining mozzarella cheese and cook for 15 to 20 minutes more.

SMOKER SAVVY TIP: For even more smoked flavor, start the lasagna at 180°F, and turn on the super smoke feature if your model has it, for 30 minutes. Then turn the heat up to 375°F to finish cooking according to this recipe.
