To make the gravy: Into the Dutch oven, pour the chicken stock and bring it to a simmer over medium heat, using a wooden spoon to scrape up any stuck-on bits from the pot. Add the za’atar and honey.

In a small bowl, combine the cornstarch with 2 tablespoons water and whisk until smooth. Pour the cornstarch slurry into the pot and whisk until thickened. Season with salt and pepper. Adjust the seasoning by adding more honey if the gravy is too tart. For extra-smooth gravy, strain if desired.
