root vegetable medley dressing

6 Tbsp / 90 ml pumpkinseed oil

2 Tbsp / 30 ml freshly squeezed lime juice

2 Tbsp / 30 ml freshly squeezed orange juice

2 Tbsp / 30 ml rice wine vinegar

2 Tbsp / 30 ml Exotic Spice Mix (see beginning of chapter)

4 tsp / 20 ml Sucanat or agave nectar

Yield: One cup

This dressing accentuates the taste of the vegetables without overpowering their natural flavor and scent.

1. Place all ingredients in a glass Mason jar and shake well to combine. Refrigerate any unused portion.
