Vikings were, and still are, known for being massive fish-eaters. I am lucky in that I love the taste of fish, but whether it’s your favourite or not, if you are able to incorporate it into your diet, the health benefits are too substantial not to. Current guidelines recommend eating at least two portions of fish a week (with one of those being an oily variety). Research suggests that different varieties of fish may respectively preserve heart health, improve brain and immune function, and boost the health and appearance of skin and hair. This recipe is one of my mother’s crazy creations and pairs delicate cod with savoury nutty brown rice and sweet pineapple. She loves trying out new things and using up anything in the fridge: there’s never any food waste in her house! Because she is a fantastic chef, she manages to combine things that you would never think of putting together, but that actually work incredibly well, like fish and fruit.
