MUSHROOM–GREEN OLIVE TAPENADE Substitute green olives for black. Add 1 teaspoon ground cumin and the grated zest of ½ lemon.

MUSHROOM–DRIED TOMATO TAPENADE Replace the olives with roughly chopped dried tomatoes or store-bought dried tomatoes. Use 1 cup fresh basil leaves instead of the parsley.
