Smoked Salmon and Avocado Panini

If you enjoy smoked salmon with cream cheese, you’ve got to try it with avocado. Pureed avocado is just as creamy as cream cheese—even smoother, perhaps—and a squeeze of lemon juice gives it a nice tang (and salmon, as we know, tastes great with lemon). For these sandwiches, my idea of deluxe smoked salmon panini, I slather both cream cheese and my avocado spread on the bread and pile on beautiful smoked salmon, dill, tomatoes, and red onions.
