LENTIL SHAWARMA LETTUCE WRAP

Traditional shawarma is a Mediterranean café staple made from spiced meat that’s grilled on a rotating spit. This healthier, plant-based version enhances the filling lentils with aromatic seasonings.

1 tablespoon freshly squeezed lemon juice

1 tablespoon tomato paste or sauce

2 tablespoons low-sodium soy sauce

1 (16-ounce) can brown lentils, drained and rinsed

2 teaspoons ground cumin

1 teaspoon ground coriander

1 teaspoon paprika

¼ teaspoon ground cinnamon

¼ teaspoon ground cloves

4 large romaine lettuce leaves

½ cup diced cucumber

½ cup diced tomatoes

4 tablespoons kalamata olives

½ cup Tzatziki

1. In a medium bowl, stir together the lemon juice, tomato paste, and soy sauce until well combined.

2. Add the lentils, cumin, coriander, paprika, cinnamon, and cloves and stir until the lentils are evenly coated.

3. In a medium skillet, gently warm the lentil mixture over medium heat for about 5 minutes, or until thoroughly warmed through.

4. Add ¼ of the lentil mixture to each of the 4 large romaine lettuce leaves.

5. Top each lettuce wrap with the cucumber, tomatoes, and olives, then drizzle the Tzatziki over the filling before rolling the lettuce leaf.
