CALAMARI SALAD

I was intimidated by the thought of calamari until I saw it frozen and cleaned. Very easy and quick to prepare!

1½ lb cleaned calamari rings

½ cup carrot cut into matchsticks

⅓ cup extra virgin olive oil

3 tbsp lemon juice

1 tbsp balsamic vinegar

1 cup chopped fresh parsley

2 cloves garlic, minced

¼ tsp freshly ground black pepper

1 small red onion, chopped

Optional: 2 stalks celery, chopped (see Note)

Bring a large pot of water to a boil. Rinse squid under cold water. Cook squid in boiling water for 60 seconds. Drain in a colander and transfer to a large bowl of cold water to cool for 5 minutes. Drain squid and pat dry.

In a small pot with a steamer basket, steam carrot matchsticks for 2 minutes.

To make dressing, whisk together olive oil, lemon juice, vinegar, parsley, garlic, and pepper in a small bowl.

In a medium bowl, combine squid, carrot, onion, and celery, if using, and toss together. Add dressing and let marinate for at least 30 minutes before serving. Serve chilled or at room temperature.
