Render you own fat and make scratchings

If any food should be a ‘super food’, this is it. When you purchase large chunks of leaf fat, you are not just buying lard. You are also buying peritoneal membranes which hold it all together alongside lymph nodes and lymphatics. These latter items are highly nutritious and make for the most divine scratchings.

Making dripping is a job that can be done in large batches since it will keep for weeks in the fridge and months in the deep freeze.

Cut the leaf fat into strips no thicker that one centimetre.

Spread them out on a wire rack over an oven tray and place in the oven at 180°C.

As the fat melts onto the oven tray, pour it off into a pot. Keep doing this until no more fat runs. It should produce white fat – if the fat is brown then the oven is too hot.

Allow to cool and store in the fridge and/or freezer.
