Cover the dish with greased foil or wax paper. Put in a preheated 350 oven for 5 to 12 minutes. The rule is to cook 10 minutes per inch of thickness measured at the thickest point from the time the liquid begins to simmer.

Fillet of Sole in Champagne Sauce

This is a recipe from a very famous French restaurant. It is not difficult to make and it is superb.(For two servings).

2 oz of whiting or other white fish put in food processor or blender. Add 1 egg white. Blend. Add k cup of milk, a little salt, white pepper, (and truffles if you want to really make it like the French restaurant, 1 oz.). Blend at high speed until it is a smooth and shiny paste.
