PANFRIED MACKEREL WITH GREEN OLIVE RELISH

Mackerel is one of the most underrated fish, and perhaps for this reason is quite inexpensive. Mackerel is a nutrition powerhouse. In addition to being high in omega-3 fats, it is loaded with minerals such as calcium, phosphorous, potassium, selenium and magnesium, and vitamins such as A, D, K, niacin, B12, Vitamin C, choline and folate.

INGREDIENTS

FOR THE RELISH:

¼ cup/60 g shallots, diced

filtered water

½ cup/90 g green olives, pitted

½ tsp lemon zest

1 tbsp/3 g fresh parsley

1 tbsp/3 g chives

½ cup/75 g watercress

2 tbsp/30 ml fresh lemon juice

2 tbsp/30 ml extra-virgin olive oil

¼ tsp sea salt

¼ tsp pepper

2 tbsp/30 g butter

6 4-oz/115-g mackerel fillets
