Ingredients

1.25L (5 cups) cooked rice

5 large eggs

¼ tsp paprika

¼ tsp turmeric

3 tbsp oil (divided)

½ red bell pepper finely chopped

1 medium onion finely chopped (optional)

½ cup frozen peas - thawed for about 15 minutes before use

1½ tsp salt

¼ tsp sugar

¼ tsp black pepper

2 shafts of spring onion (green part only) finely sliced

Method

Heat a wok over high heat and add the 1 tbsp oil. Then add the diced onion and bell pepper and stir-fry for about 2 minutes until the onion is translucent.

Now, add the rice and stir-fry again for about 2 minutes, using a shovelling action to ensure the rice is heated equally. Use a wok spatula or the back of a wooden spoon to flatten out and break up any rice clumps.

Meanwhile, use a fork to fluff up the rice and break it apart.

Now beat 3 eggs in one bowl and then in a separate bowl, beat the other 2 eggs and add 2 tablespoons water, turmeric and the paprika. Then place these two bowls aside for later.

Next, on a medium hob, heat a wok and add 2 tbsp oil. Then add the 3 beaten eggs (without the water and spices) and scramble them. Remove them from the wok and put to one side.

Now again heat the wok, this time over high heat and add the remaining tbsp oil. Next, add the diced onion and bell pepper and stir-fry for about 2 minutes.

Next, add the rice and stir-fry for a further 2 minutes, and again using a shovelling motion to heat all the rice equally. Use your wok spatula or back of a wooden spoon to flatten out and break up any rice clumps again.

Now pour the uncooked egg and spice mixture over the rice mixture and stir-fry for about 1 minute until the egg coats all of the rice grains.

Stir fry continuously and add the peas for another minute. Then sprinkle the sugar, salt and black pepper over the rice and stir again. When you see steam rising from the rice it means it is thoroughly heated.

Finally, mix in the scrambled eggs and sliced spring onions and serve!
