Risotto with Salami and Beans

THIS IS MY SIMPLIFIED TAKE on a rustic, but rich and sumptuous dish from the rice-growing regions of northern Italy. The original is delicious but heavy. I’ve cut down on some of the porky ingredients and substituted olive oil for butter. The result, I think, is still delicious but a good deal more digestible. If you serve this as a first course, plan to follow it with a light, simple grill of chicken or fish.
¾ cup borlotti or other speckled beans, soaked overnight
4 cups chicken (this page) or vegetable stock (this page)
1 large onion, halved and thinly sliced
1 garlic clove, crushed
2 tablespoons extra-virgin olive oil
⅓ to ½ pound salami, skin removed, chopped coarsely
1½ cups Italian short-grain rice, such as arborio, vialone nano, or carnaroli
½ cup well-flavored dry white wine
sea salt and freshly ground black pepper
2 tablespoons freshly grated parmigiano reggiano cheese, or more if you wish
