Buffalo Chicken Mac n Cheese

Give Mac n Cheese a makeover with chicken and buffalo wing sauce and watch the happy smiles around the dinner table.

Servings: 4

Total Time: 45mins

Ingredients:

• 2½ cups elbow macaroni

• ¼ cup unsalted butter

• ¼ cup all-purpose flour

• ½ tsp ground mustard

• 2 cups whole milk

• 2 cups Cheddar cheese (shredded)

• Salt

• 1 cup cooked chicken (chopped)

• 1 stalk celery (cut in half lengthwise, cut into 1" pieces)

• ¼ cup blue cheese (crumbled)

• ¼ cup buffalo wing sauce

Directions:

1. Preheat the main oven to 425 degrees F.

2. Cook the macaroni until al dente, drain.

3. In the meantime, in a saucepan of 3-quart capacity, over low heat, melt the butter.

4. Using a whisk, stir in the flour along with the mustard until silky smooth.

5. A little at a time, add the milk and heat to boiling point, while continually stirring.

6. Boil for 60 seconds until the mixture is bubbling and heated through.

7. Add the shredded cheese and stir until the cheese entirely melts and the sauce is silky. Season with salt.

8. Gently stir the cooked pasta into the sauce.

9. Add the chicken, and stir.

10. Transfer the mixture into a casserole dish.

11. Garnish with celery and blue cheese, and drizzle with store-bought buffalo wing sauce.

12. Bake in the oven, uncovered, for between 5-10 minutes, until the cheese is melted and bubbly.

13. Serve.
