Cocoa Soufflé

Eggs (5)

Sugar (¾ cup + 4 teaspoons)

Baking cocoa (½ cup)

Flour (6 tablespoons)

Salt (¼ teaspoon)

Milk (1 ½ cups)

Butter (2 tablespoons)

Vanilla extract (1 ½ teaspoons)

Technique:

Separate the eggs and leave them to sit at room temperature for about 30 minutes. Spray a soufflé dish with cooking spray in the meantime. Set out 4 teaspoons of sugar for the bottom of the pan.

In a small saucepan, combine the salt, flour, cocoa, and the remaining sugar. Then pour in the milk and stir it in thoroughly. Allow the mixture to boil for a few minutes. Cook, stirring regularly for 1 to 2 minutes. After adding the butter, transfer to a large mixing bowl.

Gently fold the egg yolks into a small amount of the hot mixture. Return everything to the dish after that. Add the vanilla extract and mix well. Allow a few minutes for the mixture to cool.

Using an electric mixer, beat your egg whites until stiff peaks form in a separate large mixing bowl. A spatula should be used to whisk 1/4 of the egg whites into the chocolate mixture. Ensure that you continue to stir until there are no whiter steaks.

Fold in the remaining egg whites until thoroughly combined. Finally, transfer the mixture to the prepared baking dish and bake for 40 to 45 minutes at 350°F. Ensure that the center is secure and that the top is puffy. Serve immediately after sprinkling with confectioners' sugar.
