Roasted potatoes are so versatile and will be at home alongside grilled and roasted main dishes that range from roast chicken to a grilled steak. We couldn’t imagine not having them in our repertoire, and thankfully, potatoes are low FODMAP approved. Rosemary, as with all herbs, is welcomed into our diet as well and our Garlic-Infused Oil (here) gets put to good use here for added flavor. The olive oil and the high oven heat are what make these roasted potatoes so luscious: crispy brown on the outside and tender and creamy on the inside. These are best when they are hot right out of the oven.
