Ginger
Few spices besides ginger root are versatile enough to flavor both entrées and desserts, from Asian meals to gingerbread cookies. Native to South Asia, ginger (Zingiber officinale) has become a popular spice around the world.
A close botanical relative of turmeric, ginger is rich in kaempferol, an antioxidant that inhibits the Cox-2 enzyme. Ginger also blocks lipoxygenase, another enzyme involved in the body’s production of inflammatory compounds. It addition, it appears to contain trace amounts of melatonin, a hormone otherwise made by the pineal gland that has antioxidant and anti-inflammatory properties.
