GINGER SHRIMP CAKES

SERVES 4 TO 6 • PREP TIME: 10 MINUTES, PLUS 30 MINUTES TO CHILL MIXTURE • COOK TIME: 15 MINUTES

Similar to crab cakes, these succulent shrimp patties get their chewy and satisfying texture from brown rice. I like to serve these with a dollop of garlic aioli and a drizzle of sriracha sauce for a simple but elegant meal. You can also make the patties smaller and serve them as an appetizer.

Cooking oil spray

1½ pounds raw shrimp (thawed if frozen), finely chopped

1 cup panko bread crumbs

1½ cups cooked brown rice

1 tablespoon minced fresh ginger

2 garlic cloves, minced

2 tablespoons minced scallions

2½ tablespoons soy sauce

3 large eggs, lightly beaten
