This meatless meal brings the heat. The health benefits of poblano chilies come from an active ingredient called capsaicin. This makes the peppers hot, but it also lowers cholesterol and blood pressure. Poblanos bring more of a kick than bell peppers, but bell work just as well.
6 large poblano chilies
1 tablespoon extra-virgin olive oil or cooking oil of choice
½ red onion, finely diced
Kosher salt
3 garlic cloves, minced
2 teaspoons cumin
1 teaspoon ground coriander
⅛ teaspoon cayenne pepper
2 cups cooked quinoa
1 (14.5-ounce) can no-salt-added black beans, drained and rinsed
5 ounces canned tomato sauce (about ⅔ cup)
Juice of ½ lime (about 1 tablespoon), plus lime wedges for serving
¼ cup roughly chopped fresh cilantro, plus more for serving
¾ cup shredded Monterey Jack cheese
Avocado slices, for serving
