Boiled Vegetables (cauliflower, carrots, green peas, French beans and potatoes) sautéed in butter, and sliced boiled eggs.

Method

1. Remove the giblets, wash the inside of the turkey and marinate in a mixture of salt, pepper powder and ginger-garlic paste for thirty minutes.

2. In a pan, boil the onions and tomatoes in stock or water and cook for five minutes till the vegetables soften and turn pulpy. Strain and set aside.

3. In a small bowl, mix together the 8 to 9 Sauce, chilli-garlic sauce, tomato ketchup and red wine.

4. Heat half a tablespoon of butter in a pan and stir-fry the cloves and cinnamon. Add two tablespoons of butter and sauté the flour till golden brown. Add the onion and tomato mixture and cook for five minutes. Add the sauce mixture and cook for two minutes.

5. Rub the remaining butter in the cavity and all over the turkey. Roast the turkey in an oven preheated to 2000 C for at least two hours, or till cooked and golden brown.

6. Slice the turkey and serve with the cooked sauce, cooked vegetables and sliced boiled eggs.
