This simple dish is a snap to make, tastes great, and is great for you. It’s a starch and veggie all in one! Depending on your affinity for olive oil, you may use as little as 2 tablespoons or as much as ¼ cup. The potatoes do take a while to cook, but the nice thing about this dish is that you can just put it in the oven and forget it and then be amazed at how the flavors marry when the baking dish comes out steaming hot.

SERVES 4

INGREDIENTS

1 bunch asparagus, tough ends trimmed

2 to 4 tablespoons olive oil

4 medium-size red potatoes, scrubbed and cubed (about 2 cups)

½ teaspoon salt

¼ teaspoon black pepper
