Try chopped onion or capsicum instead of spinach

Preheat the oven to 180°C. Wash the sweet potatoes and stab them all over with a fork.

Microwave for 7–8 minutes. If you prefer, you can bake them (but think of the time you’ll save!).

Cut the cooked potatoes in half, and scoop out about a third of the soft flesh from the centre. Reserve the cooked potato to stir into your overnight oats (see here), or mash with miso and serve with fish.

Place the halves cut-side up on a baking tray lined with baking paper. Divide the chopped spinach between the potato halves and crack an egg into each one.
