FRUITING: Sweet cherries bear fruit within three to six years; sour cherries usually bear within three to five years.

YIELD: A standard-sized mature sweet cherry tree can provide up to seventy pounds of fruit per season. Sour cherries yield less, depending on variety, but you should get at least one gallon out of a dwarf tree. Bush cherries produce about fifteen pounds of fruit per bush, depending on variety and growing conditions.

HARVESTING: Cherries become ripe in June and July, depending on variety and growing area.

Sweet cherries and bush cherries need to be picked carefully, with their stems still on the fruit. The technique is to pull gently and twist upward. Sour cherries are not so delicate; sometimes the stem—and even the pit—stays on the tree. The fruit is ready to be picked when it is brightly colored; leave the lighter fruit to ripen.

Neither sweet nor sour cherries ripen after they’re harvested.
