This dish is classically prepared with heavy cream and lots of butter. While this makes an especially creamy dish, scalloped potatoes can be just as satisfying with far less fat and calories, as this recipe proves. The slow cooking renders the thinly sliced potatoes tender and tasty.

The secret to successful rice is letting it cook without lifting the lid—with the slow cooker, that’s even less of a temptation, which is an advantage. You’ll want to be sure to rub butter around the edges of the slow cooker so there is moisture and flavor on the outside, where the rice will cook faster than on the inside.

makes 4 servings

2 tablespoons salted butter

1 cup (195 g) white rice

2 cups (500 ml) water

Salt and pepper, to taste

1. Rub the butter along the bottom and sides of the slow cooker. Add the rice and water. Stir gently.

2. Cook on Low for 4 hours or on High for 2 hours.

3. If the rice isn’t fully cooked when you open the slow cooker, give it a gentle stir and continue to cook for about 30 minutes.

4. Season with the salt and pepper.
